Walnut Cake
It is hard to get tired of this amazing mix of walnuts and dark chocolate. Moist and decadent coffee cake perfect for your afternoon cravings.
Ingredients
75g plain flour
75g granulated sugar
2 tbsp vanilla sugar
2 eggs (whites and yolks separated)
150g walnuts
75 ml oil
100g white yogurt
1 tsp of cinnamon
Pinch of salt
60g dark chocolate
15g butter
Start by mixing egg yolks, 50 grams of granulated sugar and vanilla sugar into a paste.
Add oil and yogurt
Next, add ground walnuts, sifted flour, baking powder, cinnamon and salt.
Whisk the remaining sugar with egg whites until soft peaks are formed.
Gently fold in whipped egg whites into your mixture.
Transfer your batter to a loaf tin lined with parchment paper.
Bake at 170 °C for 40 minutes.
Once your cake is cooled down, melt 60g of dark chocolate with 15g of butter and spread evenly over your loaf.
Set aside and serve the following day.
