Blueberry pie
This is a typical Czech summer pie that every grandma makes. And yes, they all have their recipe; this one is from my grandma, so of course, it is the best.
Ingredients
Pie dough
500g plain flour
22g of fresh yeast
1 egg
70g room temperature butter
200 ml of milk
Pinch of salt
Streusel
4 tbs granulated sugar
3 tbs plain flour
2 tbs semolina flour (I like to use a mix, but it can be made just with plain flour)
3 tbs melted butter
Toppings
300g of blueberries
2 tbs melted butter
First mix together warm milk, sugar, and yeast. Set aside for ten minutes and wait for the yeast to activate.
Add flour, butter, eggs and activated yeast mixture into a standing mixer with a hook attachment and kneed the dough until smooth. It will take approximately 20 minutes.
Once ready transfer your dough into a bowl, cover with a clean kitchen towel and let it rest for 1 hour in a warm place.
Prepare your tray, line it with parchment paper or use butter and flour to prevent the pie from sticking.
Once your dough doubled in size transfer it into your prepared tray, use your hands to evenly spread the dough. If the dough is sticky, dip your fingers in cold water.
Add blueberries (or any other fresh fruit) evenly across the entire tray, and let sit for another 20 minutes.
Preheat the oven to 170 °C
In the meantime, prepare your streusel by mixing the ingredients in a small bowl.
Melt a few tablespoons of butter and brush the edges of your pie.
Top your pie with a generous amount of streusel and bake for 40 minutes.
